Gluten Free Pancakes
Ingredients
- 200g gluten-free flour
- 50g sugar
- 2g xanthan gum
- 2 eggs
- 500g milk
Steps
Mix the dry ingredients first. Add the eggs and 100g milk, mix until all lumps are gone. Keep adding milk in 100g increments and beating with a whisk to avoid lumps.
Pre-heat a pan on the stove, make sure the pan is hot enough before adding the dough, or else it will stick. Add some butter and wipe it with kitchen towel.
Cook the pancakes on both sides until they easily come off with a spatula and show some colour.
Notes
Try swapping the milk to an alternative, oat milk is particularly delicious.
